El Dorado is a blend of 18-30 month old spontaneous barrels dry-hopped with El Dorado from Washington. The blend itself was well-balanced and had some dramatic papaya and pineapple flavors to it from several of the 2 year-old barrels that were used. Having not done a fully spontaneous dry-hopped blend before, we decided to accentuate these tropical flavors and got samples of several hop varieties: Riwaka and Motueka from New Zealand, as well as El Dorado, Eureka, and Calypso from the Pacific Northwest.
After a round of blind taste testing with staff, El Dorado was deemed the favorite, and we added 1 lb/bbl to the blend for several days prior to packaging.
